Separate the chicken wings from the breast so that some of the breast meat remains, and separate the breast from the side of the bone (we can cut the breast in half with the bone in the middle).
Then we separate the thighs from the back bone and we also separate the muscle from the thigh.
Then, for each chicken, mix 2 tablespoons of olive oil, 2 tablespoons of lemon juice, a little salt, pepper, dissolved saffron and chopped onion and soak the chicken in this sauce for 4 to 5 hours.
How to skewer chickens?
Then skewer the chicken pieces, so that the thighs and muscles are on one skewer and the wings and neck are on the other skewer and the breasts are on the third skewer.
First, we put the skewers of the thighs and wings on the fire evenly and we blow the fire a little and turn the skewers upside down.
Then we give them olive oil sauce and lemon juice and when they are toasted, we put the skewers on the fire (because the breast meat is soft, you should put it on the fire a little later) when the chicken pieces are golden and roasted.
And during the roasting period, we should regularly put olive oil sauce and lemon juice on it.
Then decorate it with parsley and serve before cooling.
