There are 5 different types of saffron, each f which has different price. In the following, we will introduce these 5 types. 5 types of saffron are: Negin, Sargol, Pushal, Dasteh (Bunch in English), Konj or white saffron.

Dasteh (Bunch in English):

In the type of Sargol saffron, there is no creamy part (white of saffron) and the completely red stigmas are separated, forming pure saffron. In fact, it is what everyone refers to as saffron. Sargol saffron is a common saffron in the Iranian market.
Negin saffron is a special type of Pushal saffron. In Negin saffron, the red and thick stigmas of the stigma are separated from the existing filaments without the creamy part (yellow) and therefore there is no yellow color in this type of saffron. The most expensive type of saffron is Negin saffron.
Production and sale of Negin saffron is not an easy job, due to the time-consuming and costly process and more activity required for processing. In some cases this type of saffron is also called Super Negin. This name is due to the excessive size of saffron stigmas.
It has the maximum coloring power of about 230 to 270 units.

The method of detecting the original saffron
The delicate strands of saffron have a trumpet shape and no matter how they are harvested, they must retain their trumpet shape.
The color of saffron is one that can be used to determine whether saffron is of good quality or not. Put a few strands of saffron in cold water (Please pay attention that the correct way is to use cold water not hot water). Real saffron starts to spread pure yellow pigment and this color stays for 10 to 15 minutes. After 30 minutes, it slowly turns orange. But the fake saffron immediately turns to dark orange.
Sunlight affects saffron, so it should be harvested before 7 am to prevent burning, drying, loss of aroma and minimal preservation of its aroma and flavor. In the fake saffron market, to achieve the more density of saffron, additives such as starch, permitted food colors are added. After the saffron enters the water, if you see the slightest oil on the surface of the water, saffron is fake.
