Ingredients for preparing Iranian saffron Tahchin :
Chicken breast: 1 pc
Rice: 3 cups
Yogurt: 1 cup
Butter: 50 g
Egg yolk: 2
Onions: 1 medium
Rosewater: 1 cup
Barberry: 100 g
Sugar: 1 teaspoon
Liquid oil: as needed

Cinnamon: 1 teaspoon
Pistachio slices: as needed
Salt, turmeric, and black pepper: enough amount
Step 1: You need to prepare the chicken breast. To do this, put the chicken breast with a few cups of water and chopped onion and turmeric inside a pot. Then place the pot on a medium flame. After the chicken breast is cooked, turn the flame off and let it cool down a bit. then shave the chicken breast completely and put it in a bowl and set it aside.
Step 2: Clean the rice and rinse it several times with water. Then choose a suitable pot and pour a few cups of water, salt, and some oil with rice into the pot, and put it on a gentle flame. After a while, test the rice. and when the rice is soft enough (so that it is cooked around and the marrow is a little firm), then the rice is ready for drainage.
Step 3: Select a suitable pan and pour the oil into it. Place on a low heat stove. After the oil is hot, add the chicken breast that you shaved in the previous steps and fry. Then add some cinnamon, salt, and black pepper to the pan and stir and fry the chicken again. After frying the chicken, set it aside, now add the oil to the pan again and fry the barberry with the sugar for a few minutes on low heat. At this stage, be careful not to burn the barberry.

Step 4: Choose a large bowl and then add the egg yolk along with the rose water and infused saffron and stir until the raw smell of the egg disappears. Then add the yogurt to the dish in the next step and mix it well again. In the next move, add the drained rice to the bowl and mix the ingredients well until smooth. To cook the bottom of the crease, it is better to use a fireproof glass container or so-called Pyrex. (You can also use non-stick pots)

Step 5: Grease the inside of the Pyrex dish with an oil-soaked brush. Pour half of the ingredients into the bottom of the pan and squeeze well until they are completely compressed. Then add the roasted chicken with the roasted barberry and press it well back to the bottom of the pan. Then pour the rest of the rice into the container and press well. Finally, divide the butter into small pieces and place it on the surface of the rice.
You can also use Kermanshahi oil for this purpose. Draw a thin foil over the Pyrex and place the Pyrex in the oven. The time it takes for saffron Tahchin to fully bake at 180 C is one hour. Important points in making saffron tahchin:
If you add butter from the beginning, it will make the color of Tahchin darker.
As soon as you turn off the gas or oven flame, you should flip the tahchin to the dish, make sure that if it stays in the pot and mold, it will soften and smell like eggs.
Use enough yogurt so that your rice does not overcook.
